Pearl barley was selected due to its historical importance on the Estonian table as well as for its nutritious properties, because barley is full of valuable proteins and contains a lot of the essential amino acids lysine and tryptophan. Pearl barley contains an average of 1-1.5% of fat, 76.8% of carbohydrates, 8.5% of protein, as well as calcium, phosphorus and iron.

Our dish is special due to serving a 9000-year-old food through modern food culture.
